This festive appetizer is served with caramelized goat cheese with marinated spiced pear wedges, walnuts and fresh seasonal herbs.

Chestnut “Cappuccino”

[without coffee]

Elegantly seasoned chestnut spice soup, refined with dark chocolate and a spectacular cream espuma. This gourmet soup is served with thinly sliced duck breast strips

with chestnut cream.


Main course A

Juicy fried duck breast [sous vide] with a spiced rum pot duck sauce.

This Christmas flavor fireworks display is served with confit celery

filled with celery puree and a handmade savoy cabbage vegetable bag

with [carrot, celery and savoy cabbage] on potato gratin from the oven.
